Authentic Hummus
The secret to truly exceptional hummus is using dried chickpeas (not canned), cooking them with baking soda until very soft, and blending with quality tahini until impossibly smooth.
Ingredients
- 250g dried chickpeas, soaked overnight
- 1 teaspoon baking soda
- 150g quality tahini
- 3 tablespoons lemon juice
- 2 cloves garlic
- 1 teaspoon cumin
- Ice water as needed
- Salt to taste
- Toppings: olive oil, paprika, whole chickpeas, chopped parsley

Drain soaked chickpeas. Cover with fresh water, add baking soda, and boil for 45-60 minutes until very soft — they should smash easily between your fingers.

Drain chickpeas, reserving some for garnish. Rub handfuls together under water to remove skins for extra smoothness (optional but recommended).

Process tahini and lemon juice in a food processor for 2 minutes until thick and pale.

Add garlic, cumin, and salt. Process another minute.

Add warm chickpeas in batches, processing for 4-5 minutes total. Drizzle in ice water as needed until very smooth and creamy.

Taste and adjust lemon juice and salt. Spread on a plate, create swirls with the back of a spoon, and drizzle generously with olive oil. Sprinkle with paprika, reserved chickpeas, and parsley.
