Grilled Mediterranean Sea Bass
In Mediterranean cooking, the freshest fish needs only the simplest preparation. A whole sea bass, scored and grilled with olive oil, lemon, and fresh herbs, is one of the most elegant yet easy dishes you can make.
Ingredients
- 1 whole sea bass (about 800g), scaled and cleaned
- 1 lemon, thinly sliced
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 4 cloves garlic, sliced
- 4 tablespoons extra virgin olive oil
- Flaky sea salt and black pepper
- Fresh parsley for serving
- Lemon wedges for serving

Score the fish with diagonal slashes on both sides, about 2cm apart and to the bone.

Season inside and out generously with salt and pepper. Stuff the cavity with lemon slices, herb sprigs, and sliced garlic.

Rub the outside with olive oil and let sit at room temperature for 15 minutes.

Preheat grill to high or heat a grill pan until very hot.

Grill the fish for 8-10 minutes per side, depending on thickness, until the flesh is opaque and flakes easily with a fork.

Transfer to a platter. Drizzle with remaining olive oil, scatter fresh parsley, and serve with lemon wedges and a simple green salad.
