Fattoush Salad
Fattoush is a bright, crunchy salad that makes the most of crispy pita bread and seasonal vegetables. The sumac dressing adds a distinctive lemony tang that ties everything together.
Ingredients
- 2 large pita breads
- 3 ripe tomatoes, diced
- 2 Persian cucumbers, diced
- 1 green bell pepper, diced
- 5 radishes, thinly sliced
- 3 green onions, sliced
- 1 cup fresh parsley, chopped
- 1/2 cup fresh mint, chopped
- 1 head romaine lettuce, chopped
- For dressing: 4 tablespoons olive oil, 2 tablespoons lemon juice, 1 tablespoon sumac, 1 clove garlic minced, salt and pepper
- 1 tablespoon pomegranate molasses (optional)

Split pita breads and tear into bite-sized pieces. Toss with olive oil and bake at 200°C for 8-10 minutes until golden and crispy.
